I was wondering if any one had a recipie for mashed cauliflower. I have eaten Ruby Tuesday's several times, and I think it is really good.
I would love to be able to make some whenever the craving strikes. like right now :yum: . even though it is way past my bedtime, and I should not be fantasizing about any food right now!

I like this one (my hubby thinks its da best!!):

Mock Potato casserole YUMMMMM


16 oz bag of frozen cauliflower florettes
2 tablespoons butter
4 oz cream cheese
1 lbs cooked chopped bacon
8 oz shredded chesse, your choice
2 tablespoons scallions

micro caulif. w/2tbsp water for 10-15 minutes until VERY soft - drain then mash with hand potatoe masher in an oven safe dish (or puree in chopper if you like that consistency) with butter add cream cheese and mix well. Add remaining ingredients. Bake at 350 for 20 minutes until brown and bubbly. Even those that don't care for cauliflower will love this - my hubby does!

I figured up the carbs. to be about 5 per. ser. not bad...cauliflower 1cup 6carbs, butter 0, cream cheese 0, bacon 0, shredded cheese 1, scallions 2,

My fave way for really smooth tasty cauliflower puree is to steam a chopped head of cauliflower until very soft (steaming stops it getting soggy)

Blitz in the foodprocessor and add a tbs of butter, cream and mayonnaise. Season and whizz until really smooth. Add some snipped chives
