Okay. I'm back on strict induction so I've altered my OMG Pancake recipe a bit and have exact measurements (sort of) this time:

1/4 cup atkins bake mix (3)
1/4 cup flax meal (0 because of fiber)
dash salt (0)
1/2 tsp baking powder
1 egg (1)
tbsp sf vanilla syrup (0)
tbsp sf cinnamin syrup (0)
tbsp heavy cream (0)
tbsp oil (0)

Mix all ingredients together and add more liquid or more mix if consistency isn't up to parr. Heat on MEDIUM with butter in pan. Tablespoon onto pan and cook slowly and patiently so they don't fall apart. These are perfect!!

PERFECT! Nice and sweet, even without adding sf maple syrup when eating.

Recipe makes 10 pancakes. At about 5 carbs for the entire recipe!!!!

I'm eating them as I'm typing and I think next time I won't use so much of the sf syrup in the recipe as they ARE a bit sweet. But I'm a BIG STICKLER with texture of foods and these have the taste AND texture of pancakes -- ON INDUCTION!!!?!??!?!!!

Hope you enjoy! :yum:

Sounds great! What type of induction safe syrup do you use? I've tried the Atkins and it is pretty much water with maple flavoring ha. Do you know of any that are thicker but not full of suger alcohols?
Thanks!

You can buy maple extract and add that to melted butter.

I'm afraid to try them during induction, but it looks great so I will definitely try them later. I miss pancakes.

is it safe to eat the whole recipe for induction, or are they large pancakesand only a few should be eaten?

Sorry if this is a stupid question but I am new to all of this. What is:

sf vanilla syrup
sf cinnamin syrup

Is it the extract? What does the SF stand for??

sf = sugar free and they syrups are by davinci or torani

Do you need to absolutely need to add the flax meal?
I have everything EXCEPT that.......

hmm... i dunno, the flax really adds to the consistency of real pancakes...

Smuckers makes the best SF syrup, I've tried the atkins brand and it was HORRIBLE! Also have you tried the pork rind french toast of Karen's? It took me a good year to get up the nerve to try it, but once I did I can't believe I didn't try it sooner! It's a wonderful pancake and very simple to make also! Never in a million years would you guess it was made with pork rinds!

I just found some atkins bake mix the other day (the stores by me seem to have dropped low carb products  ) so I made these this weekend -- first time in ages. Oh YUM!! They were so good, so perfect, I had to make 'em both sat and sunday... the key to a PERFECT pancake (induction style) is using GOLDEN FLAX. :yum:

I made these this morning. I didnt have the different flavors of davinci, but I did have caramel davinci, so I added 2 tbsp of that, and I didnt have heavy cream, but I did have the sugar free land o lakes whipped cream (in a can) I added a good squirt of that. I had some SF maple syrup and added some of that too. I used the regular flaxmeal, not the golden kind.

These were very very yummy. It took the substitutions very well, although they were a bit dense. I am going to try the golden flax next time and see if that helps.

I had some blackberries from the garden and put some more whipped cream on top.

I have to mention that I used the Atkins bake mix that had been sitting on top of my fridge for I bet nearly 3 years because I found the stuff detestable the first and only time I used it and they tasted fine. Now I have a use for that stuff.

This recipe is definatly a keeper! Thank you so much!

I don't think these mixes are "legal" on induction.
At least not for me.
