16 eggs
10 strips of bacon
5 large fresh mushrooms sliced thin
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
4 green onions chopped (both green and white part)
salt and pepper to taste

Instructions:
Prepare 9x13 pan with vegetable spray.
Preheat oven to 350 degrees F.

Fry and crumble bacon, set aside. Slice mushrooms and green onions, set aside. Scramble eggs.
Place eggs, then bacon, then mushrooms, then cheese, add dollops of sour cream over mixture. Sprinkle with green onions.
Bake for 20-25 minutes until warmed through and cheese is bubbly.

Serve with sliced ripe tomatoes &
ripe sliced avocado drizzled with lemon juice (to keep from turning brown)

I love the sound of this for breakfast - but I'll have to reduce the recipe to suit 2-4 people. Either that, or start up a B&B!

Make the whole thing, and then portion it out. It freezes well.
