I know that this has been considered before but I am wondering if anyone is using coconut oil? It's been awhile since I have read anything about it. Does anyone have any suggestions on how to disguise the taste? It's absolutely awful!!! I love raw coconut and coconut used in baked good but the coconut oil straight makes me gag. I have tried cooking with it ... such as frying chicken and stir fry, making a sort of candy with it but the taste is overwhelming. Suggestions anyone? Also, has anyone been successful losing weight quicker by using it?

Does it taste like coconut? Like, if you used it to fry chicken, would it have a slight coconut flavour?

I thought it might give a nice coconut flavor to the fried chicken but it was really pretty ghastly. Have you had any success using it?

I have found that mine leaves a slight coconut flavor.

You can get a lot of the benefits of cooking with coconut oil by cooking in clarified butter (ghee). You just melt regular butter, then chill it in a bowl until it is solid. After it's solid, slip it out of the bowl and rinse off the sediment that has collected on the bottom with warm water. It lasts a long time without going rancid and has a cleaner flavor than coconut oil, at least to my taste.

I add coconut oil (10 g) to my Atkins' breakfast cereal (along with flaxseed, walnut pieces, frozen blackberries, and Hood's milk) each morning. I eat very little fat, and I consider this a healthy addition.

My husband and I like the flavor -- in foods like curries. Can't stand it with eggs!

I also use coconut oil as a facial moisturizer, and it has cleared my sebboreah dermatitis (have no idea how to spell that!). I put it in my hair if I start having any "dandruff", and last summer I discovered that it makes a reasonable sunblock when onthe beach (I didn't burn on my shoulders at all -- FL gulf beach).

However, I have not seen any weight loss from it.....

I make LC muffins with coconut oil, coconut flakes, ground almonds and some fruit.

It keeps me regular too; I haven't been constipated once since I started eating muffins everyday.

I pour a little oil on top of the muffin also and cover it with a few spoons of low carb yogurt (24 hour homemade); I hardly taste the oil.

I often put a dab on top of semi-cooled coffee and drink it off. I think I got used to the taste because at first it made me gag.

I haven't seen weight loss, but I have lost fat from the coconut oil. I eat alot of tho. I don't know the prescribed dose for weight loss; I thought coconut oil was advertised as 'build lean muscle, lose fat'. (over the past 2 months I used around a gallon of coconut oil- I don't know how I did this, I was not trying to eat that much of it - my belly shrunk about an inch)

and it was great! I used almond meal - I did not grind almonds myself. It seemed to work well.

Do you happen to know how many calories per muffin? Now that I am close to my goal I need to watch my calories. Thanks again for such a great recipe that uses coconut oil so well. (I wanted to incorporate it into my diet butt was not sure how to do it.)Thanks again!!!! :wave:

question: the coconut flakes -- I get the dehydrated coconut (from Tropical Traditions) -- do I reconstitute it first??????

Just grind the coconut flakes a bit in a food processor if you have one. You don't reconstitute it, think of it as coconut flour.

The muffin recipe Moseyman shared is SO delicious. My husband and my daughter both liked the muffins, too. They froze well and were even more delicious after they were frozen and then toasted. I had estimated that they were about 200 calories each and it turns out I was right. Here is what I came up with after entering the info. into fitday (for each muffin, assuming you make a dozen out of the batter): (NOTE: I used half butter and half coconut oil)

205 calories
19.5 grams of fat
49 grams of protein
3 carbs

IMO pretty much a perfect little snack

Back to the cocunot oil? Has anyone seen any thing great like losing wieght with the cocnut oil, I bought some lastnight and I made my omlette this morning, I have never had a better omlette then this morning! It was good! :)

I just started using coconut oil last week. I bought Mary Enig's book "Eat Fat, Lose Fat", and she recommends a tablespoon of coconut oil a half hour before each meal. I bought some poor-quality stuff at WalMart, the Lou Ana brand, but am awaiting a mail order of the good virgin organic kind. I love the coconut flavor, and have eaten raw coconut as a treat for a long time.

Yeah, the quality of the coconut oil has everything to do with the taste. I highly recommend Tropical Tradition; they have virgin (slight coconut taste) and expeller-pressed (bland for cooking everything).

I currently follow the rec's in Fallon's NT but will be doing a seasonal detox soon and then moving on to the new Eat Fat, Lose Fat to get a few stubborn pounds off.

I have been using Garden of Life Organic Extra Virgin coconut oil that I purchased at Whole Foods. I find it delicious eaten straight from the jar. I have some Tree of Life coconut oil that I use for cooking - I find that one pretty bland.
