I call this a sandwich cause I dont know what else to call it. Yesterday I was thinking about these bomb egg sandwiches I used to eat off this catering truck. They were made with croissants, egg, cheese, bacon/ham, and hashbrowns. Best thing I ever tasted. So anyway here's my version sans croissant.

1 egg
3 T (1.5 oz) cream (I used hood milk)
1 oz cheddar cheese
1 slice ham (or bacon) chopped
2 oz cauliflower

This is made for quick cooking in the morning so it's all in the microwave.

Put the cauliflower into a coffee mug and fill with water, cook about 2 min or until tender. Drain water out, leaving cauliflower inside. Smash up cauliflower a little bit so it forms into the cup better. In a separate bowl, whisk egg and cream together. Pour egg mixture over cauli. Cook in microwave 1 min. Then layer cheese and chopped ham on top, microwave another 30sec-1 min. When done, wait a few seconds to cool and pop it out on to a plate. Yummy yummy egg cup sandwich thingy! :D

This sounds good and simple. It wouldn't be bad with a smidge of salsa either. I'm going to tell my daughter. Great for kids in the AM too.

I tried this for breakfast and it came out pretty good. I am always looking for ways to incorporate veggies into more meals. I didn't have any ham on hand, and I like large breakfasts, so I made some small changes to amounts

1/2 coffee cup of cauliflower (maybe 2-4 oz instead, no clue since it's not mashed completely)
2 eggs
splash of hood
cheese (with taco seasoning added, all I had)
salt, pepper

like I said it turned out really good. My only complaint is that I'm not quite full. For me there is a huge issue of sight when I eat. Basically 2 eggs scrambled don't seem to fill me up, but take those same two eggs and have them flat in the pan covering more surface area, and I get fuller. A mock danish never fills me up, but an omelet with less calories can. I know it's all in my head, but for some reason it still happens.

I know what you mean.. maybe because you eat it slower?? Not sure.
