Hey everyone, my hubby and I are just starting -again- on SB and this is the problem he always runs in to.....What to eat for lunch.
A little background.... He is a truck driver, so it has to be driving friendly as he doesn't really have the time to stop and eat.
It has to be tasty, and filling, he's a big guy.
So any suggestions you all may have the better. We need to make this work this time!

Is he over the road or local? Can you cook things for him to take? What kinds of things does he like to eat?
Does he have anything that he can warm food in like a 12V skillet or pot or a mini micro oven?
If he has a thermos there's a number of LC soups and he can take turkey or ham roll ups or whole wheat pita sandwiches.

One of the easiest things I can think of right now would be meat rolls in the lc soft taco shells. There are a lot to choose from just try to stay away from the ones with trans fats. I like lettuce,tomato,onion. mustard and then either turkey or chicken. But any lower fat meat would work, even eggsalad.

No he doesn't have anything to really heat up food in his truck, although he has been known to ask if he can heat up stuff when he stops at the mills he hauls for.
He is local, hauling wood, lumber, building supplies.
I was thinking of low carb wraps, but the ones we have tried so far have tasted like cardboard. But there are still a couple varieties we haven't tried.
What do you guys think of the new low carb flour tortillas? Good idea or bad? I know I couldn't have them, trigger food. But I was thinking that maybe if it was only once a day early in the day maybe they would be okay for him? I don't know what do you guys think???

I used to drive and man I can't imagine trying to lc on the road. One truck stop I used to have to use had a restaurant(?) that had only fried food coated in batter. Even their veggies were that way. They had a big display case and everything in it was golden brown. Nothing green or any other color for that matter. So your hubby really has a challenge before him. Does he get home every day? Does he have a 12 volt cooler? If not, they are really worth the investment and come in a couple of different sizes. He could carry salads or sandwiches(lc of course). He could have lettuce wraps, or a tub of chicken salad or tuna salad made with meat and veggies. Beyond that I am afraid I am at a loss. He could cook on his manifold . Just wrap food in at least two layers of tin foil. Be sure the tin foil is well greased. Wedge the food on the manifold and by noon it will be steaming hot. I hope some of these ideas help a little. Also, many grocery stores have deli's and he may be able to find some appropriate choices there although this can be expensive. Also he could carry celery sticks (whole ones) and a jar of peanut butter. Just stick the open jar in the cup holder and stick the celery in and munch as you go downthe road. Be careful though. Too much of a good thing and all that.

I think it's up to your husband. He's going to be the one that has to stick with this WOE. If lunch is going to be such a problem that he ends up giving up this WOE, then I say just try the tortillas and see how he does with them. If he's going to use the tortillas, then he'd probably want to stay away from other grains for the rest of the day, though. Also, as long as you're considering the LC tortillas, you might as well consider some whole wheat or low-carb bread. Again, just watch the grains for the rest of the day.

Other ideas might be to have meat & veggies without any bread. The meat can be cut up into strips, or use sliced ham & turkey (roll up the slices and you have "strips" of ham or turkey!). Veggies could include carrots, celery, pepper rings, cherry tomatoes... even cooked veggies like broccoli & cauliflower can be handled easier if the pieces are large enough.

If he has some time to stop, then he could take some tuna salad (or eggsalad or chicken salad...) and eat it without the bread. Again, just have some veggies on the side to munch on.

the LC tortillas that I've tried have been not only tasteless (face it the taste is in the lard) but they've been flimsy too. I was rarely ever able to separate them from each other without damaging them. How about trying whole wheat pitas?
So I'd go with things like FF meats wrapped in lettuce, maybe different flavored mayos. And as others have suggested tuna, chicken or egg salads. I've made a salad with bulgar wheat (1/2 Cup), cucumber, tomato, Oil and vinegar that could go with the wraps. Some sliced leftover steak with veggies. Make Olive Oil dressings they have a lot of staying power. Take nuts or cheese sticks for snack. LC yogurt, ricotta cheese sweetened and flavored are excellent.
He'll need some way of keeping them chilled, maybe a 6 pack cooler with a freezer pack. It's pretty small and convenient.
