1 medium eggplant, peeled and sliced lengthwise into 1/4" slices
1 26oz jar no sugar added ragu pasta sauce
16oz lite ricotta cheese
8oz shredded mozzarella
grated parmesan cheese

1. Preheat oven to 375.
2. Spray the eggplant slices with cooking spray.
3. Bake on a cookie sheet for 10 minutes and allow to cool.
4. Spread a little ragu on the bottom of a baking dish and top with a layer of the eggplant.
5. Spread a 3rd of the ricotta on top of the eggplant, top with a 3rd of the mozzarella and sprinkle with a little parmesan cheese.
6. Spread a 3rd of the sauce on top of the cheeses.
7. Repeat steps 5 and 6 until you have 3 layers.
8. Cover the top with parmesan cheese and bake for 40 - 45 minutes.
9. Remove from the oven and enjoy!

I made this last night, WOW is all I can say. Very delicious... and extremely easy to throw together.

Only problem.... it's sooo good ya have to be careful not to overdo portion size.

MMM!! That sounds excellent. And easy.
I will have to make some for my poor husband who is low carbing (short term for his scrawny butt) and doesn't have my tolerance for the same foods over and over. (I actually enjoy a routine)
Well he does, but only if it involves bread, cheese and sausage :)

Believe me, this may be one dish he'll adopt to having over and over - it is that good. I actually like this better than regular old breaded eggplant.

Enjoy. I'm making it again this weekend.
