I made this up for dinner tonight and it was so yummy I had to share! Sometimes when I experiment it doesn't turn out great, but this was quite good. (it serves one person)
ingredients:
1 4-oz steak
2 strips of thick-sliced bacon
half of a small red onion
olive oil
thyme (dried)
rosemary (dried)
dash of salt
method:
preheat the oven to 375
wrap the steak with the 2 slices of bacon and place in the middle of a baking pan
chop the onion into large segments and arrange around the steak
drizzle olive oil over the onions, then put a dash of salt on them if you like
take the dried herbs and sprinkle them over both the onions and the bacon/steak
pop in the oven for 25 minutes, then under the broiler for 5 to crisp the bacon a bit
Eat and enjoy!! I really liked getting a bite of the meat and eating it with a piece of onion. I served this with a red leaf lettuce salad with various veggies and grated parmesan cheese. :yum:
