Technincally it's a salad but it's also a satisfying main dish. On SBD this is a P1 dish. If you like Mexican food I'm sure you'll love this.

2 boneless skinless chicken breast halves
1/2 t. chili powder
1/4 C water
1/2 head iceberg lettuce, shredded
1 lg. tomato chopped
10 sm. green olives stuffed with pimento, chopped
4 T picante sauce
2 oz. Monterey Jack cheese, shredded
1C cooked pinto beans
Spray non-stick skillet and place on medium heat. Brown chicken breasts on one side (approx 6 minutes). Turn and sprinkle with chili powder cook for 2 minutes more. Add water and cover skillet. Turn to medium low and continue to cook until done (approx. 10 minutes or until meat thermometer reads 160)
While chicken is cooking place the beans in a small saucepan and warm them on low.
When chicken is done divide the ingredients in half and layer on each plate in this order:
Lettuce
tomatos (around the edge of the plate)
olives
heated beans
chicken (cut each breast into 4 slices and arrange on top of the beans)
picante sauce
cheese
You can add NF sour cream if you like, but I'm not sure that would still be P1.
