A failed attempt at making a banana bread gave me this wonderful lc version of Jiffy cornbread--thought I'd share
Measurements are estimates
1/2 cup almond flour
1/3 cup ricotta cheese (softened in mw)
1 tsp. vanilla
1 tsp. banana extract
2 packets of stevia sweetner (I'm sure any type lc sweetner will do fine)
1/3 cup granular brown sugar twin
1 tsp. baking powder
2 eggs
1/8 cup cream
Here's how I put it all together: Warm ricotta in mw til semi-smooth, add vanilla, banana extract, cream and all sweetners and blend well. Add eggs and baking powder, then add almond flour and mix well (approx 30 strokes with a fork). Spray a small bakeware dish or even a small plastic container (I used a square 4x4 "throw away" tupperware dish) with nonstick spray and pour batter in (will come up about an inch in bottom of container). Microwave at full power for abour 2 minutes. It really tastes just like Jiffy cornbread!
