Sunshine 2,

I saw your post about living in Tulsa. I also reside in T town. Hope all is going well on your low carbing. I've been doing it for two weeks now and all seems to be going well. I also did Atkins about 5 years ago and lost 50 pounds or so, of course I've gained it all back and then some after the birth of my sweet son. Hope to hear from you

Hey Julie, just read your post. I was on a low carb diet about 4 years ago, not Atkins and lost 50 lbs too, but here I am again, with most of it gained back. But this time I found a better WOE and I'm looking at this as a WOL not just a diet.

Glad to meet you. Have you started your own journal yet? Under My Journal/Bootcamp?

I just now signed up for this and you were the 1st one that popped up. What are of OK are you from?

I've been on the Atkins before and it does work, but the past year I've been sooo bad! Moved here, bought home, 9/11 happened and I just didn't care what I ate. Started again 1/02/02 and already lost 5 lbs. I love this way of eating and I DO feel better.

What's your story on the Atkins?

Nice meeting a fellow Okie!

Hello there, I "used" to live in Vegas, now I'm in Oklahoma, actually I moved to Las Vegas after I graduated from college Oklahoma State, but was horribly home sick, so I moved back to Oklahoma to be with my family. I lived in Vegas for about 10 months. Enjoyed it, but I love Oklahoma (Tulsa).

Welcome to the forum.

I've been on Atkins pretty faithfully since July, but have went off of it a few times with some carb binges, (went on a cruise for a week) had the holidays to deal with. But all in all, I've very happy with the Atkins Way of Eating (WOE). I look at this as a WOL (WAY OF LIFE) not just a diet. I know I will have to eat like this for the rest of my life, carbs make me fat, its a fact. There are tons of recipes to make and different way of cooking so I've adjusted to the low carb WOE and way of cooking.

Thanks for the reply. Yes I miss Oklahoma too! But my job transferred me here (from Hellston, TX--Houston) so I'd rather be in LV than Houston.

Thanks for the welcome too, I'm really glad to be here. Used to utilize one of these when I started the program years ago and it helps to have someone to talk to, see others' progress and seek encouragement, tips, etc. from.

I maintiained my weight for 3 years on this WOL and wish I'd never gotten off it! I've felt horrible for the past 6 months, and of course gained the weight back. I'm like you that too--I can NOT eat carbs.

Best of luck to you.

Your right, the recipes are out of this world. I was having some "cravings" for somethig different for breakfast, was tired of the eggs and bacon, so I made the Sour cream banana nut bread, it was really good, my kids liked it. I would warm it in the mike and add some butter, yum yum. I've do the mock danish quite often , some of the cookies and some different jello things. I plan on trying some soup too. Learning how to cook low carb and different substitues you can do is the key to staying on this WOE. So I can have my cake (the banana nut bread) and eat it too!

Hey Cindy, I just went to Chili's today for lunch in Owasso, not much low carb there except the usual salad, I did get some of the boneless buffalo wings, even though they had breading, a little more carbs than I should have I'm sure, but oh well, life goes on.

Welcome to this forum, I love it. One of my special treats I get when TOM (TIME OF MONTH) is here is one of the carbolite bars at Walgreens. I swear they taste like a Hersheys candy bar. But I heard they can make you stall so I don't eat too many of them, and so far, nothing bad has happened.....so if you get that incredible, uncontrolable chocoalte graving, you ought to try one.

CindyF
Fri, Jan-25-02, 15:46
Thanks...that's what I'm discovering too about eating out. I am going out for steak tonight, so that's always a delicious option! :yum:

I'll pick up one of the bars and Walgreens and try it out! I've been eating a few of the Akins bars, and it's ok, but not great. It's also EXPENSIVE ($2.00 per bar!!). I'd like to find some other alternatives.

Nice to see your post. Thanks for responding so fast!

sunshine2
Fri, Jan-25-02, 15:53
Yes, tried the Atkins too, but let me tell you, you will get hooked on the carbolite bars, they are found at Walgreens in the "diet" section, with all the protein bars, they are 1.29 per bar. They are small, and well worth the $$$$.

Yum, steak, sounds good.

PS - have you started a journal yet? Under My journal/Bootcamp. I recommend you do that, you'll get lots of advice and encouragement there.

CindyF
Fri, Jan-25-02, 16:19
Yes, I have started a journal...only 2 days old, but I like keeping track of what I'm eating and how I'm feeling about this.

Can I have the carbolite bars on Induction?

sunshine2
Fri, Jan-25-02, 16:55
I probably would avoid them on induction.....just to be safe......

They haven't caused me any problems and i'm still losing, but everyone is different, they say they have 0 grams, but they actually have about 2 if you eat all of the bar. They are good though.

I noticed that noone has been on this thread in a while but I noticed it this morning and like the idea that I'm not alone in this big :p state of Oklahoma.

 Hello. I live in the big city of OKC. I just started LCing a week or so ago. I stumbled on this forum looking for info on the LC WOE. An acquantance of mine did this over a year ago and dropped at least 100 pounds in just a few months. NO NO NO I'm not that delusional to think this is typical. I just want to loose my weight gradually. I have however lost 4 pounds in that week or so. Boy was that first few days tough. I started a journal but have a bad habit of not listing my food intake.

Good luck to the rest of the Okies out here.

Spongebutt,
I know exactly where Enid is. My son has had a few wrestling tournaments there. As a matter of fact we will be there in July for the Nationals.
I'm surprised to here you are ready to get back to OK. Most everyone I here are ready to get out. Personally, I was born and raised here and I happen to LOVE it.
My husband and I are about to start looking in Mustang for some land to build a house on. Want to let out little ones run wild where we don't have to worry about them.

Glad to here you're doing well on the diet. Can't wait until I'm just a few pounds from my goal. I could say it's baby weight, but my youngest is 10 and I was smaller after I had him than I am now. So I thought I would try this l/c thing and it seems to be working pretty well.

Good luck getting those final pounds off. That's the best reward.

Well, as I told some of my professors, I'm neither Sooner born nor Sooner Bred, but I happily married a life long OKie, and I settled here with him. I live in Shawnee now.

I've actually thought an awful lot about having a low-carb barbecue/party. I'd love to meet some of the others of us, encourage each other as we see we aren't alone in our state or even town... If anyone would be interested in helping plan or even just being involved in a central OK LC "barbecue", please let me know. I'm busy in school, but I'd love to be a part of one.

And I've found that small requests make most restaurants work for me. For instance, I went to Chili's and got one of the steaks, but I had them leave it off the garlic toast and got the grilled veggies in place of anything else on the "side". I've also gotten the mushroom jack fajitas and have them hold the tortillas. IHOP, I ask them to substitute a veggie, or else just ask them to hold the pancakes. I ate at a Mexican place and 1) found that I could order just the fajita filler without any of the other stuff, and 2) If I hadn't done that, I was just going to give the rest of my stuff to other diners at my table (it was ladies' night out). I had my fill, I shared with others, I enjoyed people's company, and while I was aware of what I ate, I didn't have to worry about it.

MatsideMom
Wed, Jun-05-02, 12:30
Heather,

Okay, I'll let it slide that you are not Okie born and bred.

I think that is an excellent idea, a central OK barbeque (sp?). Shawnee isn't that far for me. I'm OKC. I also have a few friends who l/c and would come too.

I'm always intrigued with the other Okies who are l/cing and their progress. So I have to admit, I went through your journal. :o I'm very impressed. :wiggle: I hope to have as much success as you have had.

My encouragement came from my family. I have two very small built children and a step daughter who just had a child. OK 1. My husband decided he too was overweight. In just a few months he went from 210 to 160. (he's only 5'7" to begin with) 2. After that I decided I didn't want to be the only fat one in my immediate family. 3. My step-daughter just had a baby, and I didn't want to be the FAT grandma. :nono: 4.My grandmother died and I didn't have a dark or appropriate dress, so I borrowed one from my mother. My mother has always had a weight problem. My aunt made the comment, "I never thought I would see the day when you would be big enough to share clothes with my sister." :bash: THAT DID IT. I had been fat long enough.

I made my decision and I've stuck with it so far.

Goin', goin', the numbers on the scale keep goin' - down.

Until next time.

OK, I have been very bad. I stopped the LC all together. I got the flu and then got a respiratory virus and just stopped everything. Now that I am better (except 2 fractured ribs from all the coughing) I am about 8 pounds more than I was. So, I am starting again on Sunday, 7-21-02. Please, please, please send me any tips and support that you can. I am so depressed about my weight. My daughter's birthday is today. She is 5 years old. I am a single mother (we adopted this precious little one as a baby and then the husband decided that he didn't want to be a father). We have never had our picture made together because I hate the way that I look. And I also have diabetes, so I know that this way of life will do me nothing but good! So, I really need some support. I am in OKC, work full-time, and Mommy full-time. So, anything you all can give me for ideas will be appreciated. Thanks!

This is easy, yummy, and fairly inexpensive.
Low-Carb Breakfast Meatloaf
2 pounds ground meats
3-4 eggs, depending on size
2 cloves garlic, chopped (or 1/4 teaspoon garlic powder)
1 cup grated Parmesan (I use the canned kind)
1 bunch chopped green onions
1 package chopped spinach, thawed and drained

Mix well, shape into loaves or fill muffin tins. bake 1 hour at 350 for loaves, or 45 minutes for "muffins". Makes 8 servings (or 16 muffins) at about 1 gram of carbs per serving. You can freeze individual serving; I thaw them in the microwave for about 5 minutes on power level 3, then full power for about a minute to warm them through. They're good for any meal, tasty. Hope that helps!

Hi everyone... I live in Tulsa and am on the atkins once again... I lost weight once but gained it all back and then some. Now I know it has to be a way of life. I am doing much better this time. And this time I am having fun. I have lost 38 lbs (no, I did not excercise) and have about 20 to go. Man, it is so nice to be able to swish water about me in the tub..lol

I would love to hear from any of you low carbers. Maybe we could start a support group in Tulsa to get together and exchange receipes and find people who would like to bike or walk in groups. I have some really good receipe's. I have found some great products online at:

http://shop.store.yahoo.com/zerocarb/

The site is advertised on this site. Before you order let me know and I'll let you know what's good and what's not. usually if you go by the rating that the staff gives the product you'll be okay... I've wasted tons of money on yucky products. This site has some really good stuff.... read about shipping!!!!

I think having a low carb support group here in Tulsa is a wonderful idea. Maybe more will post and we will see just how many live here in Tulsa.....

Also, thanks for the website, I'm going to go check it out.

And, another thing, I know what you mean about the tub.... ;)

Hope to talk to you soon.

Akins Health food store does carry some stuff. Not sure about flavored syrups, but did you know almond flour is just ground up almonds? I didn't know that.....was making some banana sour cream bread and need almond flour, searched every store in Tulsa and could not find it, the nice lady at Akins Health store told me what almond flour really was, so I bought a big bag of almonds and ground them until it was a powder, worked perfect. You can also find Atkins baking mixes at GNC Nutrition stores. The cheapest GNC is at 41st & Yale, the Promenaud (sp??) mall. They say they can lower their prices because they have a competitor in the mall. I've noticed their prices are sometimes $5 bucks cheaper than other GNC.

Hope this helps.

Thu, Oct-10-02, 10:27
sure, its a little expensive to make because of the almond flour - takes a lot of almonds to make this much flour, but it is so worth it. I made 2 loaves when I made it, and shared with some NON low carb friends, and they loved it. Also, I must note its not my recipe, I was fortunate to find it here in this forum. Here it goes:

Banana Sour Cream Bread

1/3 cup butter, softened
1/2 cup full-fat cream cheese
4 eggs, room temperature
3/4 cup pourable (granulated) Splenda
2 teaspoons Brown Sugar Twin
1 3/4 cups almond flour
1/4 cup Vital Wheat Gluten flour
1 teaspoon baking powder
1/2 teaspoon salt
1 2.5 oz jar Gerber Banana Baby Food
1/4 cup sour cream
20 drops liquid sweetener
1 teaspoon banana flavor extract

Preheat oven to 325?F.

Cream butter, cream cheese pourable Splenda and Brown Sugar Twin well. Add
eggs - one at a time - beating well after each. Set aside.

In separate large bowl, blend almond flour, Vital Wheat Gluten flour, baking
powder, and salt.

In small bowl mix baby food, sour cream, liquid sweetener (I use liquid
Splenda, but you can use Sweet N Low or Cyclamate sweetener if you like),
and banana extract. Add to butter/cream cheese mixture and beat well.

Mix wet and dry ingredients with large spoon or mixer until fully
incorporated. Pour into greased 9 x 5 inch loaf pan and bake for
approximately 1 hour and 10 minutes (oven times may vary a bit.)

45 grams of carbs in entire recipe.
Makes 12 slices: 3.75 carbs per slice.

[optional:] Like a sugary topping? For an extra few grams for the loaf
(almost doesn't change the amount per slice), sprinkle a bit of Diabetisweet
over the top of the bread in its last 20 minutes of baking.

Walnuts or pecans can be added to this recipe as well. About 1/2 cup broken
nut pieces added just before adding to loaf pan to bake works nicely.

Note: I used a small banana and pureed it myself, and also added a few
pecans. The bread was really moist and had a lot of flavour .

PS - have you started a journal yet? I would recommend it, you will get lots of support and ideas from other low carbers, you start your journal under the "My low carb journal/ low carb boot camp thread.

 Enjoy the bread, its yummy! :yum:

Do you ever walk LaFortune? I use to do that but haven't in a while. I use to live at 51 & Memorial in Regency Park for almost 20 years. We live between 71st & 81st now on the way to Jones Airport. I made this for myself and my skinny carber husband loved it. Found the receipe online... It's AWSOME

DEEP DISH PIZZA QUICHE

4 oz softened cream cheese
4 eggs
1/3 C heavy cream
1/4 C parmesan cheese (grated)
1 tbs chives
˝ tsp Italian seasoning
3 C shredded mozzarella cheese
˝ tsp wet garlic or 1/4 tsp garlic powder
˝ C lowest carb tomato or pizza sauce (Bartolli’s)
1 C mozzarella cheese

Toppings to taste: I used hamburger meat that I cooked in a separate skillet using a little extra
Italian seasoning, black olives and a large can of mushrooms.

Spray a 9x13" glass baking dish with oil.

In a bowl, beat together cream cheese and eggs til smooth,
then add cream parmesan cheese and spices.

Put 2 C of shredded cheese in dish and pour the egg mixture over the cheese.
Bake at 375 for 30 minutes.

Spread pizza or tomato sauce lightly over crust and then add toppings.
Cover with mozzarella cheese
Bake til browning and bubbly (approx 20 min)

Let stand 5 minutes

This freezes well. Micro wave frozen pieces for about 3 minutes.

Oh my, thats where I live, Regency Park. We have lived there for about 11 years now, but we're running out of space at our house. So I'm hoping to move to Owasso soon, thats where I work. But, finances won't allow us at this time, but maybe in the future.

Yes, I used to walk Lafortune all the time, then one night around 6:00 in November I was robbed at gun point when I got back into my car. It was scarey and I haven't been there since. But I think its a nice walk and I really enjoyed it, I just haven't found a partner who like it, and I won't walk alone any longer. too many maniacs out there.

Yes, I have tried a lot of the recipes in this forum, the deep dish pizza is really good, and I absolutely love the jello cheesecake by Sharon, I make that quite often. The Mock Danish is awesome too if you haven't tried that.

I've been a member of this forum for over a year now, actually since 7/01, so I have come accross some great recipes from some wonderful people here, I just love it. I think the key is not becoming bored with the same ole bacon and eggs. Get out there and explore some. The orange spiced cookes are really good too, (can you tell I'm a sweet nut).

The cheesy chicken green bean casserole sounds yummy, I will try that for sure. I printed it out to put in my own personal low carb cookbook that I am making for my own use.

Thanks - PS have you started a journal yet?

Sunshine2,
will you give me the receipe to mock danish? Sounds really good. Any time you want to walk LaFortune let me know... I'll partner up with ya. I didn't know they was such meaness at teh park. Been there hundreds of times and never encountered a problem but can sure understand your reluctantcy.

Mock Danish

2 oz cream cheese (soften in microwave)
1 egg
1 tblspn splenda
1 tsp lemon concentrate (I never add this in - but the recipe calls for it)
1/2 tsp vanilla

mix softened cream cheese and egg. Add remaining ingredients. microwave on high for 2 minutes.

I always had a heaping teaspoon of some 50 fifty jam in the centre before nuking... delicious.

* it tastes better if you don't totally mix the egg and cream cheese; you get little pockets of crm cheese.

I will for sure let you know about Lafortune, and you let me know too if you are going to walk it. Like I said, I really loved the park, and I think its a nice walk - I'm just a little nervous going at it by myself. There usually is not too many problems out there.

You must try the mock danish, it is great.

talk to you later,

Hey gang! Great to see all the local posts! I live in Oologah which is just north of Owasso and Collinsville on Hwy. 169. It would be awesome to get a support group going either on-line or locally.
I was on Atkins for 4 months but was not presenting the results I wanted so I have switched to a modified Schwarzbein Principle plan and doing better. Slow losses but I am sure I need to do some healing from my years of abusive dieting, medications etc.
I love the recipes you all have posted. That is one of the things I like most about this WOE. It is almost like having all new food to choose from. Something I have wanted for years!

Hello. Just wanted to post and say I am from Oklahoma. Grew up in Broken Arrow and ended up in Moore my adult life. My brother and his wife live and go to school in Tulsa. I now live in Texas. Great to hear from you! We lived in South Texas twice when my husband was in the military. It was ok but Dallas is really as far south as I care to go anymore!
Why did you switch from Atkins to CAD? I have been on Atkins since July and looking for a change. I have read every lo carb book out there and am still do not feel I have a plan that will work for me for the rest of my life. I would love to hear your story!

What does CAD mean?

jakebabe
Thu, Dec-12-02, 22:26
It is the acronym for the "Carbohydrates Diet" br Drs. Richard and Rachel Heller.
Is is pretty straight forward low carb eating except they advocate a "reward" meal plan to help keep you in check with any cravings you may have.

Hi there. I was on the Atkins diet for two grueling weeks and lost 7lbs. I could not contol my hunger for carbs so I fell off the wagon for a couple of months and gained all the weight back plus four lbs. I realized I was going down and started to look at different WOE. I went to the library and checked all the low carb diets and read the CAD book last. After I read the first few pages I knew it was for me. There is a test to take to see if you are an addict. I scored in the severe catagory. With CAD you eat 2 low carb meals and one balanced reward meal which consists of carbs. The only thing is that you have to eat it within 60 minutes. I don't find this hard since I have three kids and always eat in a hurry. Even when I take my time I always have about 20 min. left. This diet is for me forever. I have energy and don't feel like I'm missing out on anything. I have lost a total of 5 lbs. On this diet you lose weight alot slower but I don't mind because the scale always goes down, not up. They say the average weight lose is 1/2 to 2lbs. a week. If you are looking for a change, I would recommend that you read the book and see if this diet would fit into your life. Gotta go . My son wants his "jue" (juice)

I've been on Atkins (this time) since June 9. I really think I am going to make it a WOL. I really don't see it as a diet anymore. I am just not putting bad stuff in my mouth anymore. I am allergic to flour and sugar, etc. It makes my butt swell!!

I'm in Enid... Low carb as a WOL is the best thing ever for me. After I got out of the Marine Corps I went from being active to being very inactive. The weight just started going up until I hit a high of 225. Anyway, I decided to take back control of my body and began eating right and exercising again. I feel 1000% better and my self esteem is almost back to where it should be. Hey, it's not only about losing weight, but feeling better about yourself.

Hello! I am in South Coffeyville. 1 and a half hrs from Tulsa. It is cool to se soooo many Okies.
This is my second attempt at Atkins. My first try bombed because I was poorly informed and pretty much caved in to my carb addiction. This time around I'm arming myself with as much knowledge as I can to fight my battle with carbs. I am loving all of the wonderfull recipes from this forum. Just knowing that I don't have to eat the same ole foods everyday is a big motivation for me. Well good luck to everyone and nice to meet you!

Hey mcadeowner--you need a journal. I was going to chat with you there and noticed you don't have one. Anyway, welcome to the Okie gang. As for spending $ on LC--there aren't many options here in the sticks. WalMart Supercenter in Ada is my best bet. I noticed earlier this week they finally have the Atkins ice creme--haven't bought any yet--afraid I'll like it too much.

Mary, I'm a teacher and I'm working on my master's in school counseling. I started my master's years ago, but my children were younger then so I never finished (I was half way there when I stopped). Now, I'm starting over as it's been too many years for those hours to count. SIGH--my brain isn't nearly as young as it once was. I have to work much harder now, but I'm enjoying the classes.

I haven't been around in a while....since I fell of the wagon I should say. heh. However, I am back in business and here to stay. Just wanted to say hi to everyone around town that has joined since I have been gone. I live in Midwest City, near Tinker Air Force Base.

Let's try to keep each other updated on the new products that show up around town. I have noticed Walmart has jumped on the bandwagon. I saw that they now carry several varieties of low carb bread, frozen dinners, bars, cereal, ice cream, atkins brownie/muffin/pancake mixes, etc. I even saw that someone said they now carry low carb milk. I will have to check that one out.

I noticed that braum's now has an ad for low carb ice cream on their sign. I see that TGIFriday's now has a low carb menu that looks awesome. I went out to Nino's mexican restaurant the other day and they had a low carb menu attached to their regular menu. We are really moving up in the world. If anyone else has any more info., keep me posted.

It's very good, Mary. In my opinion, it's much better than the Breyers. It does have higher gross carbs, but if you have no problem with sugar alcohols, then it works out. I think it comes in chocolate, vanilla, chocolate chip (the only one I have had), chocolate almond, and (I think) Butter Pecan. They have em' all listed on the Braums website. About 4 net carbs a half-cup, same as Bryers, but you have to ask at the counter for the nutritional information. They need to post that on their website.

It's only available over the counter or in hand packed pints, and is a bit expensive by the pint, compared to Bryers. It was $2.99 a pint; you can get a half gallon of Bryers for $3.49, I think. The guy at 91st & 145th told me that they are selling it very quickly, and if it did well enough they'd make it by the half gallon.

I decided after the first pint that I wouldn't get any more -- I couldn't stay away from it, it was so good, and ate most of a pint in one evening. The chocolate chip was just delicious, but I haven't tried any of the other flavors yet. The Braum's here only had 3 of the 6 flavors, but I think it is a matter of what they run out of first.

:yay: I am So excited to see some people that live in Okie Land. I live in Tulsa and am hoping to find a buddy to chat with and support. I keep thinking about giving up the LCing and trying SlimFast or some such again. I fell completely off the wagon back in September and here I am again. I started again before Christmas and lost 5 pounds during the Christmas holiday but, now I have stalled again. I am sure it is because I have had too many itsy bitsy cheats though. So, I must make a decision now....to LC or not to LC. Back in 1995 I lost 35 doing the low fat thing and I keep thinking maybe I just need to do that again. I am at work or at school so often that I must have quick and very easy to carry along things to eat. What do you guys think? Do you have any suggestions? Hi Ya'll,
I thought I had better stand up and be counted. I live in Ardmore, and I think I have been to all the towns you all are from except about three at one time or another. I've been to Durant many times. I grew up in the City and have lived in the Ardmore area in most of my adult life. We lived in Duncan for a couple of years then moved to Indiana for a year, then back to Ardmore. My grandmother lived in Holdenville, and I used to spend time there in the summer. I had a good friend who used to live in Enid and I spent a week there with her once. I know there are at least three other LCers in Ardmore, my daughter, my son, and my daughter-in-law. I also know a few in Pauls Valley. Anyway, it's nice to know there are so many other Okies here. OK Here's that recipe I promised you.

Roasted Pepper Soup

2 Tbsp olive oil 1 celery stalk, sliced
1/3 c. chopped onion 1 clove garlic
2 roasted red peppers, chopped
1 1/2 c. chicken stock
1/3 c heavy cream
1/4 c parmesan

Saute celery, onion, and garlic in oil about 5 minutes.
Add the peppers and chicken stock. Bring to a boil, then lower the heat and simmer for 3 minutes.
Transfer the mixture to blender. Add the cream and salt and pepper. Puree until smooth.
Sprinkle with parmesan.

I have no idea about the actual carb count. I just know it is low-carb. I have made this several times and I love it. It is not a pretty soup but it is good.

I use the red pepper out of a jar, rather than roasting them myself.

Thought this thread could use a bump! I'm interested to see how many Okies are still around. Anyone care to check in?

Um.....wow! You would think that Oklahoma City would have given it away, but when you are as sleep deprived as I am at this moment...even a direct answer leaves you clueless. I live in the Oklahoma City area as well. It was the Texan in your user name that threw me I guess. Really...I'm a brunette. hehe.

I live just outside of Eufaula. Moved here from California almost 5 years ago. I still get homesick, but not as often or as bad as I used to.
