We developed this method travelling and cooking with one skillet and a microwave. Saves time and cleaning at home! :cool: :cool: :cool:

Breakfast Taco for today and tomorrow!
Serves 2 each day

8—12 slices bacon, chopped before cooking into bite size pieces
2 tablespoons butter (can be omitted)
8 eggs
salt and pepper to taste
8—10 ounces of grated cheese (I use package when I can)
low carb tortillas
picante sauce

In large skillet, brown the chopped bacon. I use a paper towel to soak up the bacon grease. Add butter to melt, if desired.

Break the eggs whole on top of the bacon. Salt and pepper to taste. Fold over the eggs, as they cook, breaking yolks.

When cooked through, add the cheese and stir until melted.

Microwave the tortillas—I use one, my DH gets 2, 30 seconds.

Spoon ¼ of mixture on top of each plate.

Roll the taco and put a small amount of picante on top.

Save half the mixture for the next breakfast. No skillet to clean that day! :lol: :lol: :lol:
