Hi everyone,
I'm pretty big on healthy, on the go type of stuff. I altered a tuna muffin recipe I found. It's a little odd in taste, and may not be for everyone, but it's very rich in good for you stuff, and only 1 carb a piece! (I eat two with a salad for lunch, and one whenever I need a quick snack before running.)

12 oz tuna in water, drained
1 cup shredded cheddar cheese
1 cup flaxmeal
3 eggs
2 tbl butter
1/4 heavy cream (I used a little less)
1 tsp baking powder
seasoning to taste (I used paprika, little bit of onion powder, red pepper)


Season tuna as desired. Mix baking powder with flaxmeal, mix with tuna. Add in shredded cheese.

In seperate container, melt butter, beat in eggs, add half the 1/4 cup heavy cream. Mix with tuna/flaxmeal/cheese mixture. If it seems too dry, add remainder cream.

Grease muffin tins, spoon into tins, bake at 325 degrees for approximately 20-25 minutes, until knife comes cleanly out.

Makes 12 small muffins, with the tuna and flaxmeal it's a great source of omega 3 fatty acids. Good source of protein as well. The taste is undescribable really. I like it- a blend of the nutty flaxmeal, tuna and cheese.

11 grams fat
3.6 grams carb
2.6 grams fiber
11 grams protein

net carbs 1.0!

Call me crazy, but I gotta try this tomorrow! I'm in a tuna-loving phase right now.

I've made the "original" recipe of these many times in the past. They were actually very good. I didn't use the flax seed as you've added, so I'm assuming that's where you've altered? They were very good and they kept well for re-heating.

Hum.... maybe I'll have to make some this week.

Try it using a 10 oz can of chicken. I used salt, pepper and cayenne pepper to season and a little less than the 1/4 cup of cream. I liked it even better than using the tuna, both freeze very well.
