The wife has join me on weight lose, she wants to lose 15 pounds. You know, one of those people.

Anyway, we made this really great dish tonight that only had about 30 -40 grams of carbs for the entire dish.

4 chicken breast
1/2 cup olive oil or to taste
Mrs. Dash seasoning
1 bottle salsa (look for a low carbs variety)
2 cups melted cheedar cheese

Cut up chicken in frying pan, and spread the olive oil over the top. Spreakle Mrs. Dash over entire thing and finish cooking chicken. Melt cheese in microwave. Pour chicken without oil into a cassorole dish, and mix in about a cup of salsa. After mixed in, pour melted cheedar across the top. Mushrooms would have been nice, but neither one of us wanted to go to the store :-)

We estimated carbs for entire dish at 30 - 40 grams, due mainly to Salsa.

We also shared a nice bottle of Merlot. This is what "dieting" is supposed to be.
