EGGS IN BASIC ROMAN RED SPAGHETTI SAUCE

Serves 2

2 tb Olive oil
1/2 c Onions
1/2 c Mushrooms
1 ea Clove garlic, diced
1 cup Peeled tomatoes
1 d Salt and pepper
1/8 c Cream (opt.)
4 Lg. Eggs
***sometimes when I have them I add sweet red n green pepper strips sauted makes it taste totally different I love it
Saute onion, mushrooms and garlic in oil. Add
tomatoes, salt and pepper. Cook on simmer only 20
minutes. For creamier sauce, add cream. Sauce is
complete. For sauce with eggs, crack 2 eggs per
person into sauce and let eggs poach. Serve in red
sauce . Serves 2.

I love tomato sauce poached eggs. :thup: In fact, I was going to make it tomorrow. It's a nice way to use up tomato sauce, and a unique way to serve eggs. My SO gets his on a piece of toast.

This sounds so wonderful. I never thought of poaching eggs in tomato sauce. What better way to start the day then "Italian". I might add a little mozzeralla cheese melted on top and some red pepper flakes for some heat.
