This recipe was created for use on an Atkins-type plan. I modified it to suit the South Beach plan:
I substituted:
6 slices of ham for the 1/2 pound of bacon (I'll probably use 4 slices next time, though)
plain, fat-free yogurt for the cream
4 oz shredded cheddar for the 8 oz swiss (just because I'm trying to cut back on the cheese, and 4 oz looked like plenty)
I omitted: salt, cayenne
I also had to cook this much longer, probably due to the condition of my stove. After 30 minutes, the middle was still very runny, so I mixed it all up again, chopping up the parts that were cooked. It cooked a lot faster after that.
