Here is a recipe I make on the weekends to help me get through the week.
one bag of frozen broccoli
one bag of frozen califlower
fourteen - sixteen eggs
shredded cheddar cheese
non stick muffin pan
Cook vegies until hot, put aside to cool. While cooling whip up eggs, I add milk but you don't have to. After vegies are cooled slice into small pieces into muffin cups. Fill 3/4 full. After muffin cups are full of vegies pour in whipped eggs just enough to cover the vegies. Top with approx. 1 Tablespoon of shredded cheese. Bakes at 350 degrees for 15-20 minutes. Cool and store in baggies until ready to eat. Microwave on high for 20-30 seconds to heat. Great for week days when you are rushed to get to work.
