I think a lot of people are reading your question but don't know the answer.
I have only used guar and xanthan gums to thicken liquids so I don't know either. I also didn't know that cronstarch made things crispy. What sort of things?
Our chef Karen is away for a week but she may know and answer when she gets back.

In chinese cuisine before something is fried they usually give it a lightly dusting of cornstarch which makes things crispy. It can also be used in tempura batter, although rice flour is traditional.

Yeah nancy, cornstarch, tapioca starch, potato starch are all used to thicken things as well.
Potatofree def try it out and lemme know how it goes!
BTW where did you get your xanthum/guar gum from?
