Good Morning to ya!
A friend gave me 8 (yes, 8!!) cans of the Green Giant mushrooms- pieces & stems because she said she'd never use them. Thought it would be fun to try some kind of new recipe or snack. Anyone out there have any ideas? I've got plenty of cans to experiment with- hee hee.

What about......drum roll please......make some mushroom soup!!

Take one/two cans, use softened onions in a pan, add in a stock cube of your choice with about 2 pints water, and put herbs in - italian ones like basil/oregano etc, and then just cook it down for about 40 mins simmering gently, add two egg yolks at the end, make sure you stir them well into the mix, and half a cup heavy cream, and volia, nice creamy mushroom soup!!
Soup always makes for an interesting light lunch or snack if you're hungry but don't want a whole meal.

I love canned mushrooms. :yum: Here's what I do with them:
- add them to scrambled eggs and quiches
- add them to chili
- add them to 'pasta' type dishes like spaghetti squash or pizza casserole
- heat them up with butter, salt and pepper for a simple side
- heat them up with tomato sauce and add a bit of cheese. This is good mixed with other veggies like bell peppers or zucchini.
- 'cream' them - heat them with butter, add sour cream or cream cheese
- combine them with spinach or other veggies, buttered or creamed

Brocolli casserole:
A large bag of frozen brocoli.
About 4oz of velveta type of cheese
A can of mushrooms
A can of water chestnuts
Onions and garlic
half a cup of sour cream
Saute the onions and garlic in some butter.
Meanwhile put the broccoli in a large microwaveable dish and nuke it until its hot.
Mix onions/garlic, cheeses and other stuff into the broccoli then bake it at about 350' for about 40 minutes, until it is bubbly.
