I'm absolutely addicted to cheesecake!! What I'm wondering is if there's a way to make cheesecake "balls." It would probably have to be a no bake recipe, I was thinking I could make the filling using splenda, form them into small bite size balls (no crust of course) and throw them in the freezer. Or maybe it could be a recipe that needs baking and I could just fill mini muffin tins? Does this sound wierd? Has anyone ever tried something similar or know of a recipe I might like? thanks!!!

hmm, that sounds like a great idea. just a little bite you can pull out of the freezer. sorry, no i don't have a recipe handy but there are several in the recipe section. karen's baked one is a killer, but there are a bunch of no bake ones too. karen has a no bake one in her cookbook. i alternate between baked and no bake myself. i think i'll give this a try myself. we should keep each other posted on our progress. :agree:

Look online for a recipe called "Cheesecake Lollipops". There was a popular recipe on a johnson & wales cooking show where they made cheesecake lollipops (small balls on a stick LoL) and then dipped them in various melted chocolates and etc. Very easy to LCafy.

Sounds like a cool idea. I would use a baked and chilled cheesecake, roll it into balls, then roll the balls in sliced, toasted almonds, or cocoa. Frozen mint cheesecake rolled in cocoa would be delish! :yum:
