Idaho potato industry hoping for death of low-carb diets

POCATELLO, Idaho What's bad news for those behind the Atkin's Diet might be money in the bank for Idaho's potato producers.
According to the results of a study released this week, the percentage of American adults on a low-carb diet has fallen by half over the last nine months.
Now, the state's trademark agriculture industry hopes any decline of carb-conscious eating will translate into more potato consumption _ and more profits.
Some people on the diets had shunned potatoes.
So far, there hasn't been a dramatic reversal. But Linda McCashion of the U-S Potato Board says the industry has seen some recovery and hopes to see a lot more.
