I am going to a christmas party tomorrow night and wanted to take something LC that everyone could enjoy. I found this recipe on Landolakes.com. Wasn't sure I wanted to take an untried recipe so I made a small batch for my lunch today. It was fabulous! Very tasty and filling. My new favorite lunch.
Here's the recipe...
1 cup mayo
2 8oz blocks of cram cheese, softened
several grinds of black pepper
Shredded lettuce
Chopped tomatoes ( I used the grape toms)
Chopped green onions
1 cup shredded sharp cheddar
7 slices bacon, crumbled

Mix the mayo, cream cheese and pepper and spread onto a flat dish or pie plate. Top with rest of ingredients.
You could use cucumber slices, red pepper strips or LC tortilla's to scoop with or even eat it with a spoon!
I used the precooked bacon so it was fast to put together.
Give it a try, it makes a nice change from the same old salad for lunch.

This spread is great rolled up in lettuce leaves for a light lunch or supper. :thup:

The recipe said 24 servings at 1g carbs each so even if you eat a quarter of it that is only 6 carbs. Not bad.
