I made this up for lunch today. It's not really a "recipe" per se, but just something quick and easy and I thought someone else might benefit from it...
I put 6 chicken breasts in a 9x13 pan, and covered them with strips of bacon. It took about 1/2 a package. Then I baked the whole thing at 375 for 30 minutes.
I got the idea from a Thanksgiving turkey recipe that calls for covering the top of the turkey with bacon until 1 hour before the turkey's done.
The chicken was moist and tasty! The bacon, while cooked enough to eat without getting sick, was rather limp and pasty and needed a few minutes in the microwave to really be appetizing.

I wonder what would happen if you upped the temperature to 475 or 500 and used chicken thighs with the skin on? My guess would be crispy bacon, crispy skins and heavenly chicken. You could also use the bacon to wrap around the thighs, instead of placing on top. Hmmm. I'll have to get some more of that non-nitrite bacon tonight and try it.
Or, layer a chicken thigh, a thin slice of onion, a slice of bacon cut in half and criss-crossed. Roast at 500 for maybe 10 minutes, then remove the (mostly carmalized) onion and bacon and put aside into the same pan and continue roasting for 5 more minutes with the chicken uncovered. Hmmm. Just a guess, someone should try it and report back. Times are estimates.
I'd do it, but my wife is 6 weeks pregnant (just found out) and her heightened sense of smell has made something like this less-than-appealing.
