I know these are Phase 1 friendly on SB. This is actually a recipe in SB Book, but it just didn't do it for me. I made a slight adjustment and now it's yum!
Cinnamon Ricotta Crepes
Crepe:
2 Eggs or equivalent Egg subsitute
1/2 tsp Vanilla Extract
1 tsp Splenda
Filling:
2 Tbsp Ricotta Cheese
1 tsp Splenda
1 tsp cinnamon
Beat the eggs and blend in the other ingredients. Spray an 8” omelette pan w/ PAM and preheat. Pour mixture into pan and allow to set as you would an omelette. Flip over once and continue cooking until no longer runny.
Serve with a thin line of cinnamon ricotta filling down the middle and fold over.
