I've recently begun the Atkins diet and am very happy with how its going, but I have a couple of questions about the heavy and light cream that is mentioned in Dr. Atkins New Diet Revolution. Does anyone know if we have heavy and light cream in Australia, or do we only have one type? And are creams with artificial sweeteners available?

The way I understand it - and I think it is the same for us in NZ. If the cream you buy can be beaten into whip cream it is "heavy".
Other countries have a light version which no matter how hard out you beat it, it won't whip.
Our normal cream is heavy.

Well, I'm in neither Australia nor NZ, but I have found a few websites that you might find helpful. The Cook's Thesaurus (http://www.foodsubs.com/) is a virtual encyclopedia of foods, ingredients, tools and equipment. It includes alternate names of ingredients as well as pictures, and links to other resources. Very useful. Here is the link to the Dairy ingredients page (http://www.foodsubs.com/Dairyoth.html), with details about milks, creams and cheeses.

Thank you very much for the tips - Lesley, you were right, we do only have heavy cream in Australia. And Doreen, the websites were very helpful, I'll definitely use them for future reference. It's so nice to have a friendly on-line community like this, it's quite motivating to know that I'm not the only low-carber in the world which is what it feels like living where I do!

Hi there!
Does pure cream count as a light cream? It doesn't have any gelatin added. I have been using this by the litre in all my drinks.
