What is mascarpone? And is there an artificial sweetener out there that doesn't give headaches??

Mascarpone is a soft set cheese similar to cream cheese but smoother and sweeter. It is usually used for desserts, but it can also be used in sauces. Are you familiar with the Italian dessert Tiramisu? That is the creamy cheese used in it.

You will be able to find mascarpone in a well stocked supermarket or Italian deli.

With the sweetener question, have you tried Stevia? It's a natural sweetener available in natural foods stores. Splenda - available in grocery stores - is another choice.

Marscapone is a triple-cream cheese made from low-fat fresh cream. It's quite yummy.

Have you tried splenda/sucarlose? It is different from the other sweetners in that it is made from sugar. Also, there is stevia which is taken from the leaves of the Stevia rebaudiana Bertoni plant. I've never tried stevia, but I use splenda once in a while (we dont use much AS anymore.... with the exception of a few recipes)

I just found this website that talks about mascarpone cheese, where to buy it, how to make it yourself, and how to subsititute.

Here is the chocolate dessert she might have meant:

(She talked about this recipe after going to that mascarpone site, and there this is the only one with considerable amount of chocolate.)

Thanks Gala. I think I may try Karen's tiramisu instead though. I am wondering if it would still taste as good with rum extract instead of rum since it'll be shared with small people.
