Spring stuffed avocados
Ingredients for 4 persons: 2 California avocados (7 ECC), 1 tablespoon capers (.1 ECC), 1 onion (4.7 ECC), 2 tomatoes (8.7 ECC), 3 tablespoons cottage cheese (1.1 ECC), 1 lemon (3.9 ECC), salt, pepper.
Preparation: 20 minutes.
Preparation: Cut the avocados into two. Remove the pit then carefully take out the meat without damaging the shells. Add lemon juice to the avocado shells so that they do not get dark and put them in a tightly closed box in the refrigerator. Peel the onion and it in thin slices. Peel and seed the tomatoes, dice them as well as the avocado meat. Put the softened cottage cheese in a bowl, add the juice of half a lemon, the tomato and avocado flesh, capers and thinly sliced onion. Add salt, pepper and blend gently. Keep cool. At serving time, fill each avocado shell with the preparation.
Total ECC: 25.5; per person: 6.3 ECC.
