I have two questions.
1. If a person has kidney disease, should he avoid
eating tofu?
2. Would eating shrimp increase cholesterol?

As always, many variables are involved, but in general no and
no. A recent study showed benefits for kidney disease folk for
eating soy protein as compared to animal sources. Animal
sources of lipids can raise blood levels to some extent, I
recall figures up to 12 percent in typical instances of the US
diet. A few shrimp should have little effect, a very animal
fat laden meal from any source more. The majority of blood
lipids are made in the body.

In every circumstance avoid tofu. Soy is one of the most
refined foods sold. It is not a health food.

No. And it doesn't matter anyways. Cholesterol indicates
nothing about your health except what you cholesterol
leves are.

Here is a news article about the benefit of soy, as compared
to milk, protein on kidney disease status:
"Soy protein helps diabetics with kidney problems"

In short, a protein marker for kidney disease improved when
eating soy and became worse when eating milk protein products.
Hdl, the good lipid marker, increased with soy and decreased
with milk protein.

10. Sugar can promote an elevation of harmful
cholesterol (LDLs).
