is it alright to eat packed/wafer thin ham on the atkins? also is it all sausages you can eat?

Well, no. They're not really the best choices.
Sausages often have filler of bread crumbs or wheat or something starchy that helps hold them together. And LOTS of salt.
Deli meats (loaf, sliced, shaved) are often prepared by being soaked in a solution of SALT and SUGAR. But they're better than nothing
For the salt content alone, keep these limited as that makes you retain water. A better choice is to cook a number of boneless chicken breasts or thighs, and keep them in the frig to use as snacks or meals. And hard boiled eggs are really portable and keep for up to a week in the frig.
Atkins isn't about "all you CAN eat". It's about making good LC choices to begin with. And eating enough so you aren't hungry. At first, we fear that we will be hungry and eat more than enough. But soon, you'll realize that your AREN'T hungry while eating LC. In fact, you may have to remind yourself that it's "half past lunch already".
But do eat at mealtimes and if you are hungry between meals, then it's ok to eat a protein & fat snack - like those hardboiled eggs with mayo. You never need to go hungry on Atkins but don't stuff yourself either.
The less processed your food is, the better a choice it is likely to be.
