Hi everyone,

I'm new here. I'm wondering if any of you eat fermented foods
such as sauerkraut, rejuvelac or seed cheese. I eat them
because they are a good vegetarian/vegan source of B vitamins,
protein and lactic acid. Fermented foods are easily
assimilated into the system because they are naturally
pre-digested, so that the proteins have been broken down into
amino acids and the starches have been broken down into simple
sugars. The lactic acid aids digestion and helps destroy
harmful bacteria.

However, there's a lot of debate about these foods, and some
people are concerned about the bacteria. I'm just wondering if
any of you have an opinion.

Yogurt, bread, beer, wine, soy sauce, and others are common
foods. The gut is home to trillions of bacteria and we could
not live without them. Fermentation is an ancient way to
preserve foods longer then they would last in their original
state, the bacteria and yeast that makes them also competes
against those that spoil foods.
