3 Large zucchini~ washed and patted dry.
1/4 cup of olive oil
variety of spices: tsp garlic powder, tsp onion powder, 1/2 tsp salt/pepper
tsp cumin, tsp oregano, chopped fresh rosemary (whatever your spice desires are)

preheat oven to 500 degrees.
take cookie sheet and rub thin coat of olive oil on surface.
In a bowl throw all of your favorite spices to combine.
take the zucchini and cut in half length wise. cut the flesh out where the seeds are. discard this flesh.
slice zucchini into shoe string style slivers. like french fries.
put zucchini in bowl with spices and gently toss without breaking shoe strings.
drizzle oil and toss to coat with spices and oil.
Lay zucchini on cookie sheet, in one layer.
bake in 500 degree temp oven for 15-18 minutes until crisp.
take out and eat like french fries.

These are still the best way i like zucchini.

I've made these with both lc ketchup and lc tomato sauce w/ parmasean cheese as a dip. Both are deeelish!

I make close to the same hting in the summer on a grill. I toss the zucchini wedges with olive oil and herbs, then grill. It comes out tasting great and when you poke it with a fork all the nice juices well out.

how many carbs in zucchini?

I have seen these enormous ones at veggies stands but had no idea what to do with them. this sounds like an awesome recipe I would like to try.

Just need a carb count...*grin*

I have a recipe that calls for 4 cups of chopped zucchini, 4 cloves of garlic- minced, olive oil and parmesan cheese. Just fry the zucchini in the oil with the crushed garlic until browned and tender. Remove from pan and plate it. Sprinkle with crushed black pepper and grated parmesan cheese. Awesome!!! I eat it every summer when the zucchini are large and people are giving them away!

I just found online:

squash, zucchini, with skin, raw
4.6 oz per cup
1.891 grams carbs
.782 grams fiber
1.109 net carbs

Not sure if they are referring to zucchini squash, or zucchini squash and regular zucchini. There is a difference, right? :)

Has anyone tried this recipe with turnips? Atkins has a recipe with turnip fries, but without any parmesan cheese. They are very good! Only 2.5 net grams of carbs per serving, using 4 turnips with 6 servings. :yum:

I know what I'm having for dinner tonight. :D

I had thought there would be a difference between zuchini and squash, as well.

mind you, I've never been a whiz in the kitchen so I can hardly claim to be an expert...;)

Zucchini is a type of squash - summer squash, to be specific. Winter squash (acorn, spaghetti, pumpkin) are different... generally higher in carbs.

This is a super recipe.
the more you toss, and make sure they are roasting, the crispier they will be.
I don't like the frying idea, cuz i hate the smell of fried foods in my condo.

i love to do this on a grill, when a grill is available. you can also do this in a george forman grill.

and the more spices you love, go for it!!!!!!

Do they get really crunchy?? I too have been wanting some french fries. I made turnip fries but they get mushy. I want the crunch of french fries!!!!!

You could also make a dipping sauce for them using mayo, LC ketchup, and some seasonings (my fav are minced garlic & chopped basil).

i'm going to try these today. I don't have large zucchini but i'm sure the smaller ones should taste just as good. I bought Mrs. Dash Southwest Chipolte seasoning blend I am going to try them with. I let you know how they come out.

Oh My......they were sooooooo good. Will definitely be making these again. Plan on experimenting with different seasonings also. The Mrs. Dash Southwest Chipolte seasoning gave them such a nice spicy flavor. Next time I am going to slice them a little thicker though so I can have a little more of the zucchini taste. They were good though!!

I've been making these for a while now and do the same thing with cauliflower!!! LOVE IT so much that I make the zuchinni or cauliflower into a meal!!!

thanks SO MUCH for the recipe (oh and I sprinkle on some parm cheese when I take out of oven and WOW!)

I followed the recipe, but I just can't get them to come out crunchy. I transfered them to non stick foil to continue cooking them as they were getting soggie and sticking to the pan. I loved grilled zuchini, but am really wanting the crunch. Anybody else have this problem?

I am trying this as we speak, will post my results.

I think scooping out the middle is an important part to ensure its crunchiness. After I scooped and sliced I also tossed it with a bunch of salt to draw out any excess moisture. I am letting it drain in a colander as we speak for about 35 minutes or so (however long it takes my oven to preheat to 500)

You can rinse the salt off and use paper towels to dry them after they drain.

Zucchini has a lot of water so it tends to get mushy and sometimes its difficult to prevent.

I am using a spice mixture of black pepper, cumin, salt, hot paprika, granulated onion, granulated garlic, thyme and a little Parmesan cheese instead of salt.

These were really good. I panfried what didnt fit on my cookie sheet. Both the baked and the fried ones were great! The baked ones were crunchy some less than others but I also had to turn them while cooking so they wouldnt burn. The fried ones came out perfecty crispy but they were a bit greasy too. They were crunchy on the outside and soft in the middle. I would totally make these again instead of french fries.

I didnt pay much attention to be honest. I pan fried them in evoo until they were brown on one side and fliped them until they were brown on the other.

I suspect they would taste good deep fried but I am a horrible deep fryer.

I've tried deep frying courgette (zuchinni) fries and had no real success - they just get mushy and greasy. I find they are best roasted and, for some reason, NOT using salt in the spice mix works better. If necessary, the fries can be salted afterwards, though they don't really need it. I also add in some butternut squash fries to vary the mix and these are yummy too.

I forgot to mention that a fan oven makes the best and crunchiest job of these - dries them up nicely. And if you happen to have any homemade dripping or lard ...... prepare to be in 7th heaven!

My 3 favorites for this technique are asparagus, zucchini and cauliflower.

The only improvement I can suggest is try dipping them in Aioli - garlic mayonnaise. You can either use a fresh minced garlic clove or some granulated garlic and mayo. Sometimes I add either dill or cumin. A great side dish to fish.

I saw on another forum were somebody took a bag of frozen green beans and drizzled them with some evoo and roasted them in the oven till they were crunchy like french fries then salted them and ate them as a snack. When they are done they are rather ugly looking but all said how good they were so I tried them. Wow, if you like crunchy snacks and the taste of green beans you should try these. I then took it 1 step further and bought fresh green beans and did the deep fry on them at 375 degrees for 4 min and they were even better tasting:yum: .


If you get a chance you should try these. So nice and crunchy.

When they are done they are rather ugly looking but all said how good they were so I tried them.

This is even better with yardlong beans from Asian markets. You can also slowly fry them in a wok or skillet with some ground beef or turkey and chili sauce (tabasco or louisiana hot sauce or your favorite low carb variety).
