Faced with not knowing what to fix for dinner tonight when it is so hot and I really didn't feel like cooking or eating too much I created this. It's great as a snack or a light meal.
1 pouch of starkist hickory smoked tuna creations
handful of peeled, diced cucumber
handful of diced red onion
Mix these together and add your favorite ranch dressing till you get a good tuna salad consistancy.
Cut a large red bell pepper into eighths (or whatever size preference you have, depending on how big the pepper is) and fill with the tuna mixture.
Sprinkle the tops with shredded cheese (I used mozzerella) and voila! Great finger food for the summer!
Oh, and my four year old actually LIKED it!!! These days, finding stuff she will eat is a challenge.
You could use whatever substitutions sound good to you. These just happened to be the ingredients I had on hand.
