I made really good beef jerky a few weeks ago. I've really missed this treat, but since the commercial brands all seem to include sugar and nitrates, I've avoided it. Here's my recipe:
Teriaki Marinade
1 cup soy sauce
1 cup DaVinci's Pineapple syrup
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon powdered ginger
1/4 teaspoon black pepper
I had very lean beef sliced 1/8"-1/4" thick across the grain at the grocery store, trimmed all the fat I could see and soaked the meat for ~8 hours. Squeezed it dry and hung it in a dehydrator for 2 days in a warm room with lots of ventilation. Yummy!
