Hi everyone,

My mom started the SB Diet on advise from her doctor....Easter is coming and I am on for dessert and I know nothing about SB Diet except for what my mom has told me...she is currently in her 6th day....First Phase??? Anyways....my question is this.....I want to make her a nice dessert for Easter....now for me to do this low carb is easy....however, as an Atkinser....I don't know if what I consider low carb and acceptable will be the same for her. Anyone with dessert ideas they can toss my way that you think will be compatible for both of us?

Hi,

If I was making dessert for my mom, I would get some fresh strawberries and blueberries and rasberries and arrange them in a decorative dessert plate, put a splash of canned whipped cream splirts on top of them and serve. (check the can of whipped cream for bad stuff, i.e., the kind I use is more natural, not phoney ingredients)

From what I have learned thru my life, is, a nice dessert is nice, but a big hug from daughter to mom is sweeter than any dessert! My mom's birthday is the 19th of April and I lost her just last year. Don't mean to get soggy here, (maybe just a little) (I do miss her) but serve her some heart healthy berries with some whipped cream and a big hug and kiss and I guarantee you she will enjoy her dessert! :angel:

Wow See.....very thought provoking and well...just nice. Made me a little soggy reading about it. I'm sorry for your loss...must be hard as your mom's birthday approaches.

I'm sorry to hear about your mom too. birthdays and Holidays can be very hard at those times.

For the dessert you might also check out riccotta disserts. A baked riccotta dessert with cocoa and some splenda sweetened cherry pie filling (lucky leaf sells it) can be like a black forest treat.

If she fills she can move on to phase 2 qa little, even for a night, then maybe make a jello dessert with fruit in it and cool whip.

Josie, if your mom is still phase 1 on her birthday, she can't have any fruit, so if you think she might be a purist, you will need to find something other than berries. Jello is allowed on phase 1, I am pretty sure. Check this one out:

Thanks everyone! The last thing I want to do is sabatoge her....I know what that's like and I don't want to be any part of it. Gosh I guess she will have been on SB for around 10 days so I don't know if she will be in phase 2 or not....hmmmmm, guess I better check with her! Thanks everyone!

What about one of the ricotta creme variations? They are perfectly legal for Phase 1. Some good recipes can be found here (http://www.mizfrogspad.com/South_Beach_Diet/Ph1_Desserts.htm).

Just remember to whip the ricotta before adding the other ingredients to get a lovely light and creamy texture.
