I read in a magazine where you can take 1 1/4 lbs thawed frozencod, haddock, halibut or whiting fillets and put paper thin (lengthwise) zucchini slices (1 lb) crosswise on top of each fillet, overlapping them slightly and leving the ends exposed. Then you tuck the ends of the zuke strips under the fish and place them in a shallow baking dish that has been sprayed with nonstick spray (and has 1 cup low carb marinara sauce in it.. the fish goes on top). You brush the tops with 4 tsp olive oil and sprinkle with 1/2 tsp seasoned salt and 1/2 tsp lemon-pepper. you bake at 450 (should be preheated of course) until the fish is opaque in the center (15-20 mins)
I dont like fish.. but i thought maybe you might like to try this if you do :)
with REGULAR marinara sauce the count is 15 carbs, 2 fiber ~for 1 fish fillet and 1/3 c sauce~ of course this changes with LOW CARB marinara sauce.
