1) When were discoverd the functions of metabolism (anabolism
& catabolism) ?
2) In which year was discoverd the denaturation of fett ?
3) How many chimical synthetical products are available today
on the world market ?

There are thousands of small discoveries over decades that
would comprise this I would guess. Start several hundred
years ago.

Do you mean saponification of fat, or structure of fat?

Several million I would guess.
