The last snack page was so long, so I started this as a new thread. I am constantly looking for new "snacks", sometimes I am too busy for lunch, so snacks are critical for me. I also tend to eat 5-6 small meals, so I use many of these items as my "meals". Some of my favorites are:
Pepperoni "Pizzas" (large pepp and provolone baked until crisp, then rolled and sliced)
Ham Roll Ups (w/Cream Cheese, Scallions and Garlic)
Mac Nuts covered w/Cream Cheese and wrapped in bacon, then baked
Roast Beef Roll Ups (rolled around a scallion and cream cheese)
Cucumbers and other veggies dipped in Ranch
String Cheese (plain and fried)
Stuffed Shrooms (w/Cr Cheese, Scallions and sausage)
O'Breto Pepperoni Bites and Jerky Bites
Little Smokies
Pepper Jack Cheese Slices
Buffalo Wings (no breading, or dusted with Atkins Bake Mix)
Steamed Shrimp (dipped in a little bit of horseradish)
Baked Cheese "crackers" dipped in Cheese/Bacon/Cream Cheese Dip
Guacamole w/Veggies and Cheese Crackers
Hot and Barbecue
Homemade Salsa
Spiced Almonds cooked in cajun spice and olive oil
Mini Meatballs
Cheese Ball w/Veggies &Cheese crisps
Ham & Cream Cheese wrapped around dill pickles
Some of my favorite snack recipes
Stuffed Cucumber Rings
1 Lg Cucumber
3-4 oz Soft Cream Cheese
A variation of flavors...You can use any (or a variation of) Chopped Scallion, Tomatoes, Chopped Shrimp, Crab or Lobster, Chopped Ham, Onion, Peppers, Homemade low carb chicken salad, Turkey, Bacon, the possibilities are endless... also, add some dill, ground mustard or curry powder to taste.
Score your cucumber (you can use a fork if necessary). Cut off the ends. Using either a knife or long skinny spoon, hollow out the inside of the cucumber. While the cucumber is draining (just takes a few minutes, put it on a paper towel... keeps the insides from being real messy) Mix Cream Cheese with your filling of choice. Using the same skinny spoon or a cake decorator, fill the cucumber from end to end. Cover with wrap and refrigerate for several hours. Slice into rings and enjoy!!! You can top these on salad, you can bake the rings, etc. I got a recipe for these years ago and have come up with many variations.... fun and yummy!
The Cucumber & Cream Cheese "base" has a TOTAL of 9g Carbs (2g Fiber) and slices into about 16 slices (for an 8 inch Cuke), so about .45 Net Effective pre slice plus whatever you choose to add.
Cheesecake Bites (from Online Low Carb Cooking Cookbook)
1pkg. sugar-free Jello
1cup boiling water
2pkg. cream cheese, softened (8-oz. packages)
Directions:
1. Combine Jello granules and boiling water in a bowl. Stir until
dissolved.
2. Add cream cheese and mix until of an even consistency.
3. Pour into a baking pan and refrigerate until firm.
~16Servings ~ 1.12 g each
Key Lime Pie (from Online Low Carb Cooking Cookbook)
1pkg sugar-free Lime Jello
2pkg cream cheese (16 oz)
1tsp lemon or lime extract (optional) or fresh lemon or lime.
Make Jello according to package directions (with one less cup of cold
water) Set aside. In large bowl with electric mixer whip the cream cheese until smooth. Slowly whip in the liquid jello mixture a little bit at a time (so it
won't splash you as you mix it.) and add lemon or lime to taste. Chill
in fridge until set (3-4 hours) Total carbs: 18 g
