These meatballs were easy and great--moist, tender, and healthy. I got 2 :thup: from the kids and DH.
MEATBALLS
2 lb ground beef
1/2 medium onion, chopped
1/4 cup ground golden flaxseed
1/4 cup ground almonds (aka almond meal or almond flour)
2 large eggs
1 tbsp oregano
1 tbsp basil
1 tsp salt
1/4 cup grapeseed oil (or your favorite cooking oil)
1 tsp dry garlic powder or a handful of chopped garlic cloves
1 16 oz can tomato sauce.
1/2 can water
In a bowl knead/mix the beef, onion, flaxseed, almonds, eggs, oregano, basil, and salt until smooth texture (except for the onion bits).
In a very large frying pan pour the 1/4 cup oil and turn heat on high. Hand form meatballs (estimated about 30-40 1 1/2" meatballs) and lay them in the pan. Using a spoon turn them over when they have browned on the bottom. Turn down the heat, cover pan and simmer for a few minutes until cooked.
Then pour in tomato sauce, water, and garlic and simmer for 15 minutes. Perfect for lc (or regular) spaghetti. At our house the kids get regular spaghetti and hubby and I get LC spaghetti.
Would also be good for meatball sandwiches, or toothpick-hors d'oeuvres.
