Have seen this in many recipes.... obviously American recipes. I assume it is half cream but not sure what the other half represents?:confused:

I think it's technically ½ cream and ½ milk.
Our closest equivalent would be "light" 18% fat cream. :)

I only ever use "ordinary" cream, ie 35% or more fat.
And you're right, the lower in fat, the higher the carbs. I just checked with Diet Club for Paul's thickened creams, and these are the carb counts per 300 mL bottle:
Thickened cream__10.8
Light th. cream___17.1
Extra light_______23.1
If I think cream is a little too thick for anything, I just water it down with tap water. No carbs in that! :D

Man what a difference for lighter cream!!!
I only ever use pure cream, like dairy farmers. Its nice and runny for coffee. The thick stuff just turns to fat and I end up with a cup of oily coffee. Yuck!!
It has 3.1g carbs per 100mls. thats good isnt it?
What do you use the thickened cream for? Havent really ventured into the sweet section of this WOL, scared I might like it too much. :lol:

Sounds good to me!
I don't use the thickened cream - it was just the first one I came to on the Diet Club site.
I tend to buy the Devondale long life stuff. Mainly because it doesn't taste as good as the Dairy Farmer's etc, and I'm less likely to drink it by the spoon. :daze:
I'm actually doing a KISS version of LC at the moment, which means I'm not indulging in any dairy at all. It seems that cream and cheese were probably stalling me. :rolleyes: Still use it to cook for DH, but none for me for a while.

Actually half-and-half is about 10% Butter Fat.
Table cream is 18%
Heavy cream = whipping cream is 35%
There is also Light Cream at 5% - barely more fat than full milk but more sugar than heavy cream.

Our "light" cream is 18% and "extra light" is 12%. So I guess our extra light would be closest to your half-and-half. But too carby.
