I whipped this up last night for a snack. It's probably close to alot of the pancake recipes but it's not too bad. I had it with some SF strawberry jam.

2 eggs
1/4 cup romano cheese (or parmasan)
1/4 cup soy protein isolate
1 T water

Beat all. Pour into fry pan with melted butter. Flip when able. Brown slightly & spread with jam or syrup. Cut into manageble pieces.

I made this for breakfast but added a bit more water to thin it out for pancakes. Topped with some SF pancake syrup. It was good. The romano cheese cuts back on the soy taste. My DD even thought it was good.
