I rolled string cheese inside roast beef, splashed some olive oil on and baked until the cheese was melty!!! Fantastico!

Great idea!!! Makes me think of my favorite German food rolladen! Think I'm gonna do the same but add some sliced dill pickles!!! Yum Yum!!

one thing you might wanna watch for is that each piece of string cheese has a carb in it ... something i overlooked that caused a rather long plateau

It sounds great, but Olive Oil is probabaly one of the worst things you could fry something in. Of course, you said you baked it...but, even then, olive oil should never be truly cooked. It gives off free radicals by the cupfull. Of course, Canola is worse...rapeseed...a relative of castor beans...poisonous as well as free radicals...very bad, or soy oil...even worse...no polyunsaturates, either...baaaad, bad, bad! I've been told that sesame oil, or sunflower oil are much more stable for cooking. Best of all for cooking and frying is Palm Oil...It's the most stable of all. It keeps its' properties even in very high temperatures. All of the things we were taught seem to be wrong in this type of dieting. The idea and general recipe sounds great, though...even though we Neandernuts don't ever touch dairy...in any of its' manifestations. Good luck to all of you "Neolithic-paleos." Whatever turns your doorknob to better health!

I make mine and place on microwave safe dish and nuke them until the cheese melt. I also like the dill pickle with mine.

I didn't know olive oil couldn't be used for frying/cooking? Atkins suggests using it, and I see it being used ALL the time on Food TV as the best oil to use. Haven't heard this one? Why is this?

Olive Oil is extrememly unstable when heated. Its' little molecules just begin to do a jig and they give off electrons...free radicals... that are known carcinogens. Even the smoke in the air of your kitchen becomes dangerous. Polyunsaturates do it even worse, but olive oil should never be cooked. It's one of the best when it comes to using it for a fat, on our salads as a dressing, or poured over something without being heated. Palm oil, on the other hand, which we are told, is full of nasty, badd, booo!, cholesterol, is probably the best oil to cook with. It doesn't break down like the other oils, and stays about the same when it comes out of the pan as it was when it went into the pan...nature's gift from the South Pacific.

Captxray: Olive Oil is extrememly unstable when heated. Virgin or Extra Virgin Olive oil is not ideal for frying or baking because it is cold-pressed (and usually much more expensive). It's great for salads etc where it does not need to be heated.

However plain olive oil is very good.

I guess fiona is right on that one. I'm sorry I didn't specify that. I never eat anything but extra virgin olive oil because the further away from the cold pressing one gets, the more like any other salad oil it becomes...it loses its' healthful benefits. I don't think like you Atkins people...You're civilized. I'm a Neandernut...I live in a cave and eat worms!

I do something similar with sliced ham. I shred some type of cheese(mozz/cheddar/jack/gouda etc) and take some steamd asparagus and roll both into a slice of ham. I bake in the oven until the cheese softens and asparagus is heated and the remove and eat. It's delicious!

Anybody is welcome to correct me if I have this wrong, but I have recently been learning in my biochemistry class that basically when heated, the chemical bonds in olive oil that have made it an unsaturated fat break, and act as a saturated fat in the body, which clogs arteries because it doesn't have it's 'slippery' properties any longer. Even butter, that says it is a polyunsaturated fat is hydrogenated, and hydrogenation causes it to end up as saturated fat as well.

I've been cooking with olive oil for ages...gonna stop now!

I'm no biochemist, but I've heard the same thing for a long while. A number of books on paleo eating, which I ascribe to (Neanderthin) say that we shouldn't cook with olive oil...at least, extra virgin olive oil. I've read that the best oil to cook with (oil that doesn't break down to something else) is coconut oil...go figure.

For a few years now, one of my favorite vegies is braised spinach (or many other greens): a dab of olive oil, cook a little garlic in it as it warms up then add the greens. Salt. I've loved it for years, even before LC. It only takes a few minutes: could it really be all that bad?!

I'm still going to braise my greens in olive oil: live dangerously!
