Hi Everyone,
After stopping atkins several months ago, and felling very depressed on the low fat diet, a friend (LCer) convinced me to give atkins another go. It been 4 days now and i am so over eggs!!
Help!!! I dont want to fall off the wagon again so soon!!!
The weight loss has been good, but at what cost!
Any help or ideas would be greatly appreciated!

i know this feeling!! the hardest part is to get yourself over a mindset that breakfast = toast or cereal. you could have some deli meat slices rolled up with cheese slices. you could try making a quiche which has eggs, but when you add lots of vegies it isn't so eggy! i love making frittatas. there are tons of recipes on the web, start at this forum, but i can give you a few links:

I found this on the breakfast recipies forum, and though i would give it a try. I know it has egg, but doubt it would taste like egg.
Sweet induction breakfast
1 egg
30g cream cheese
1 Tablespoon butter
1/2 teaspoon vanilla
2 packets Splenda
Melt butter in skillet. Beat egg and 1 packet Splenda. Pour into skillet and let cook - do not stir. Meanwhile, stir cr. cheese, vanilla, and remaining Splenda together. When egg looks done, spread cheese mixture over it, allowing it to melt a bit. Take a spatula and, starting on one side, roll up the egg, crepe style, and remove from pan. Enjoy!
3g. carbs per serving.
I love the cereal recipe I have posted on this forum too, and I use the cereal Linseed/WPI mixture to make a pancake.. 3 tablespoons, mixed with 1 egg and 2 tablespoons of water. 2g carbs per pancake.
I think another great breakfast is the Coles low carb sausages (I love the italian chilli ones cold). <1 gram for 2 sausages.

My favorite egg recipe is to mix a heap of wholegrain mustard (I LOVE mustard) in with a couple of eggs and some grated cheese. Nuke for a minute, stir, nuke again till done. It puffs up and makes like a souffle, very yummy. Fried eggs make me gag if I have eaten to many of them, so I can relate!

i really like a 2 egg omelette with grated zucchini/courgette and feta cheese with freshly ground black pepper. Also someone gave me this recipe which I found great. Lightly beat one egg and pour into a large heated frying pan. Turn the pan until the base is covered as thinly and as much as possible (like a thin pancake. Flip (or if using a cast iron pan take off the heat and let finish cooking with latent heat)
You can use these like tortillas or to make kebabs or souvlaki. or even put sweet fillings in

How long did you nuke the the egg,mustard,cheese thang for? I just made and nuked it for another minute after stirring(and it had half set and started puffing up already). It tasted like set scrambled eggs. Still tasty - not complaining :) - but I like the sound of souffle!!
Thanks. It is soo quick and easy and I hardly use my microwave at all except for re-heating and defrosting!

I just nuke mine until they are set on top. They puff up at the very end, so the longer you nuke the puffier they get. Make sure you use lots of wholegrain mustard (I use 1-2 tbsp per 2 eggs, I LOVE WG mustard) otherwise it just tastes like normal eggs to me.

Well today I nuked it for 30 secs, stirred it and did it for another minute and it rose beautifully! It was runny underneath but actually was quite delicious as it moistened the whole thing and tasted of runny cheese(and mustard!)! I didn't use whole-grain mustard as I noticed it had sugar and grape juice in the ingredients(Keen's) so I used Maille Dijon mustard which is hotter but really delicious!
I can see some interesting variations too..with chives,parsley,herbs,mushies.....!!! :)
So thanks for a great new quick interesting new brekky idea!!
