Nancy's Blueberry Muffins

Here is my recipe....not inspiring...just tastes good to us and easy
1/2 C Atkins bake mix
8 eggs
1/4 C cream
pinch salt
pinch cinnamon
either atkins syrup....for sweetener or splenda to taste
whisk....butter mini muff tins....put 2 blueberries(or however many you want) in each tin pour mixture over....bake 13 minutes
at 350
Maple cream...yes I make my own cream cheese...but I have used the storebought...not much difference...
8 oz cream cheese blended with 2 T atkins pancake syrup(which is very good btw)
Like I said not gourmet...but it has helped us...especially me...I ate so many eggs when we had our first batch of organic free range hens that I have a hard time eating eggs...this helps me get my eggs. Also use this recipe for pancakes and grilled cheese..

Looks good...everyone likes to have simple recipes in their collection, as well as "gourmet" ones!!
