I am starting Protein Power tomorrow and making lists.

Can someone tell me why, for instance, I can eat 2 cups of raw broccoli but only 1 cup of cooked broccoli? What is the difference here--raw verses cooked vegetables? Anyone know?

I am on atkins but , cooked brocolli shrinks down some. That is just my guess.

There also seems to be an issue of some of the carbs in the vegetables getting cooked into sugars, or being more digestible, having more of an impact on your blood sugars if you are diabetic, or perhaps causing more insulin.

I'm not diabetic, so I don't have to worry about that portion (no pun intended!).

I guess I should simply compare 2 cups of raw compared to 1 cup of cooked and see if there's much of a difference.

Well, don't be too sure, about it not mattering if you're not diabetic, isn't it one of the main points of Atkins, that you're trying to avoid the insulin response that causes calories to be stored as fat? So stay with those guidelines, of about 1 cup cooked equalling 2 cups raw, and you will be ok. Cheers, Bill

First, I forgot to change my profile to show I switched from Atkins to Protein Power. (Today is day 5.) Thanks for the reminder. :idea:

Secondly, what I should have said more accurately is that since I'm not a diabetic, I'm not as concerned with insulin responses as I would be if I were. Sorry for the confusion.
