hey everyone, just wanted to share a recipe that i stumbled across that is quick and easy and tastes very similar to real thing, without the noodles of course! all the ingredients came from Sydney Woolworths, i hope you can find the same brands where you live.



Ingredients:

2 Tbs 'Asia at Home' Laksa Paste (2.4 carbs)

140ml small can of coconut milk (I used 'Ayam' brand from my local woolies, it has the lowest carb count 0.9g per 100mls) so (1.26 carbs)

300g seafood or chicken ( i've tried both)



Method:

1.Heat 1 tsp oil in wok (or any pan)

2. add laksa paste and stir until the aroma is released (doesn't take long)

3. reduce heat to low and add can of coconut milk plus about 2 tbs of water

stir through

4. taste for seasoning (i needed to add a few pinches of salt, but taste and see for yourself)

5. add seafood (or chicken) plus whatever else you like e.g coriander, chilli, ginger, lemongrass, garlic etc.

6. cover and cook on low heat until seafood is just cooked (a few minutes)

(diced chicken breast takes 10-12mins cooked exactly the same way).



serve in a large soup bowl with fresh coriander on top.



total carbs 3.66 (plus what ever seafood you decide on or if you like some Chinese greens or other vegies you carb requirements allows for)

try it with soy noodles that you can get at a decent asian grocery store.

Hi all, I tried this the other night with Chicken, and it was great... for more authentic Laksa I added a half cup of bean sprouts (3.4 grams carb per cup). It came out to 5 grams all up with the coconut milk I bought. The bean sprouts added a nice crunchiness and bulk to the dish :-)

Laksa is not laksa without bean sprouts!!

Although, with laksa, you don't tend to cook the toppings into the broth. The broth should have nothing in it. The bowl is prepared with the noodles, sprouts, meat, coriander, etc and then the broth poured over it. Serve with some lime or lemon.
