Sam's Version Fritattas


First you need non-stick muffin tin......

10 eggs- whip up
1 C grated cheddar
1 C of diced ham (or bulk sausage, or bacon)*

*must cook first

You can also add veggies like mushrooms,
green pepper, onion, but you have to cook them
first also, as they all give off moisture when
cooking, and would makes frittata soggy.

Place diced ham (or whatever breakfast meat) in tin
Add sprinkling of cheese
Pour approx. 1/3 cup of whipped eggs

Bake at 350 for about 20-25 minutes or unitl they are set.

Place cooled frittatas in baggies and keep them in the
fridge to grab - nuke and go in the mornings.

Makes 12 - each one has:

170 Calories

1 carb
30 protien
