Sick of eggs? Got some leftover mashed faux-tatoes in the fridge? Fry them up for breakfast in this tasty fried cake-patty-type-thing. :thup:

1/2 cup leftover mashed faux-tatoes (http://forum.lowcarber.org/showthread.php?p=1525558) (one serving)
1 egg
1 oz cheddar cheese, grated
1 tsp finely chopped onion

- Beat egg, combine with other ingredients
- Fry in butter. They will be pretty delicate, so give them a good browning on each side.

Here are the numbers for the entire recipe. I only ate half, with some sausage on the side. It's pretty filling. Note that I used my cauliflower/squash recipe for faux-tatoes. If you used plain cauliflower, the carbs will be lower.

This doesn't include the butter used for frying.

Cal: 274
Fat: 20 g
Carbs: 8 g - 2 g fiber = 6 net carbs
Protein: 16 g
