What are the differences between normal olive oil and 'extra
virgin' olive oil, nutritionally? How much cholesterol do they
contain? Thanks.

No cholesterol in olive oil. Nutritionally? I believe
unrefined extra virgin olive oil has a higher level of
antioxidants. The best is extra virgin olive oil with first
cold pressing and unfiltered, and should be in an
amber-colored type bottle - meaning not clear and not plastic.

I can't find much information about this, can anyone
confirm? Thanks.

What difference does bottling make?

The coloring protects the oil from light. Glass is enert and
plastic is not.

There is a company out in California that is producing extra
virgin olive oil unfiltered and made from organic olives. Here
is their website with contact information:

Here is another link to a very interesting page concerning
olive oil:

``The oil should be packaged in dark glass bottles to protect
it from the damaging effects of light.''
