Hello Everybody!

I'm new to this board and would like to say thanks for being here! I ran across the site while looking for low carb bread recipes which brings me to this request.

Back in 1998 I began the compilation of machine bread recipes from the web to be created into a cookbook. Well for more reasons than I can even mention here it was put on the back burner. On July 1, 2003, I was laid off from my job and found I had plenty of time to renew some of those interests I had so long put aside. So here I am researching the web again for those bread machine recipes.

In June 2003 I began the Atkins diet and am having some pretty good success with it, 21 pounds lost so far and feeling great! Since the cookbook I'm compiling was strictly breads, and so many people are now following a low carb lifestyle I thought it would be nice to include some good machine bread recipes for those low carb followers. So far I haven't been very happy with the results of some of the recipes or mixes I've found. The only one I've found so far and tried with a little success was Atkins Sourdough Mix. But I've found that I have to cut a very thin slice and toast the heck out of it to make it palatable.

I was wondering if any of you would like to contribute your original bread machine recipes for my cookbook? I intend to use your names and web sites if you have them. The title of the cookbook is "Machine Bread Recipes from the Web." Hence, your web site URL if you have one.

These recipes will be included in the section of the cookbook called "Low-Fat, Fat-Free & Low-Carb."

This is my first cookbook and I intended it to be in a normal book format, but since technology has surpassed my wildest dreams since 1998 I now intend to create this cookbook on CD-ROM and in a downloadable format as well. I would be happy to send all the contributors a complimentary downloadable copy for their participation in this quest. We can discuss what email address you would prefer this download to be sent at a later time as we are not supposed to post them here.

I have to say after perusing around this site, I'm soooo glad I found it! What a great forum for discussing the low carb way of life!

Hi Ann,

I was fortunate enough to find three very good recipes. Two are posted in Lowcarb Recipe Help & Suggestions (page 6) - A new bread machine recipe :) from CarolynF - Homestyle Oat Bread and a rye version from AZLowcarber posted in the same thread. They are both very, very good and I say that with conviction as it's so difficult to find a palatable bread that's low carb. I hope you enjoy these recipes. Thanks for contacting me.

Hey, you know what, those recipes are on a completely different board! Argh! to me, not to you, LOL. Anyway, here are two of them. I like them both, very much.

Low-Carb Homestyle Oat Bread from Carolyn F.

2 packages rapid rise dry yeast
2 tsp. sugar
1 cup warm water
3 Tbs. oil
2 eggs, room temperature
1 cup vital wheat gluten
1/2 cup almond flour
1/2 cup Wheat Protein Isolate
1/2 cup Oat Flour
1/2 cup Golden Flaxseed Meal
1/4 cup coarse unprocessed wheat bran
1 1/2 tsp. baking powder
1/2 tsp. salt
2 Tbs. Splenda

Combine all of your dry ingredients into a bowl. Blend together
water, sugar, oil, and eggs and put in the bottom of your bread
machine. Add dry ingredients. Make a well and pour in the packages of yeast. Set your machine for a 2 lb. loaf.

Okay: the key is to watch the dough as it mixes...after a while it
should form a ball..I changed Gabi's recipe as I had to add more
of the dry ingredients (I've noted the approximate amounts above). However, if your dough is still too wet, then add more
oat flour, more flaxseed meal, or more wheat protein isolate
until its forms a ball. If it is too dry, then add more water and/or

A Rye Variation
This is really good I bet. I altered it and it came out fantastic! here's the rye version I made.

2 packages rapid rise dry yeast
1 tbls. sugar
2 tbls. sf maple syrup
1 cup water
3 Tbls. butter
2 eggs
1 cup vital wheat gluten
1/2 cup pecan meal
1/2 cup wheat protein isolate
1/2 cup rye flour
1/2 cup flax meal
1/4 cup wheat bran
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. caraway seeds
1 tsp. horseradish

Put ingredients in your bread machine according to your instructions. Set machine for regular bread cycle.

Hi,

I was able to find it online at http://www.bestbodyproducts.com/fiberfit/orderfiberfit.htm but it is pretty pricey. I substituted half Atkins Bake Mix and half pure soy protein isolate, or 1/4 Atkins Bake Mix, 1/4 Oat Flour, and 1/2 pure soy protein isolate. That seemed to be a pretty good combination. Tastes good, anyway. You can get the protein isolate at www.puritanspride.com (http://www.puritanspride.com).
