I just read the ingredients for some deli ham from Oscar Meyer's and it has no carbs, but it is made with some sugar. I went to the hidden carb calculator and I think it was negative. What's up with this?

I think the answer you're looking for is down at the bottom of the calculator, after the results. Negative results may be the result of rounding. If 9.49 grams of fat was rounded to 9 grams, this will produce a negative 1 gram of carb. Manufacturers in the USA can declare as 0 carbs anything that is under one gram of carbohydrates per serving so while there may be anywhere from .1 to .9 grams, the manufacturer has rounded it down to zero.

Nothing personal, but wouldn't eat an Oscar Meyer meat if it was the last thing on Earth. I think people on Atkins owe themsleves a trip to a quality deli, where they can pick up freshly sliced deli meats in dozens of varieties. Better tasting, fresh, and usually a lot less in the way of bad stuff added.
